Sandwich spreads are a separate chapter in creating little meals like sandwiches. By definition, a spread contains nearly everything. All we can do is to top sandwiches will small pieces of greenery, chunks of cheese, a dip of sauce.
Preparation:
Mince boiled eggs and mash them with a fork, dice onion finely. Cut the cheese into cubes twice the size of the diced onion. Combine all ingredients (leaving several cheese cubes for decoration), add mayonnaise and mustard, season to taste. Cool in the fridge. Slice baguette diagonally and spread butter on the slices. Put on the spread and serve on sandwiches adorned with parsley.
